Today is a Special Day

First off, I would like to thank all of the servicemen and woman who serve and have served our country. I would like to thank you all from the bottom of my heart, you are all amazing people.

Today is even more special to me because it is my mama’s birthday!!

Now, you already know how amazing she is in taking Petrie in until Mike and my lease is up.

But words cannot even express how incredible she is as a mom, sister, friend, career woman, and the list goes on and on. Most importantly though, she has raised my brother and I to be the strong and successful individuals that we are today. She would do anything for us in the world, but she also taught us tough love.

As any family has, we’ve had our bumps in the road, but my mom has kept the three of us a tight-knit family through thick and thin. She is my best friend in the whole wide world and she deserves a long life of happiness for years to come. Happy birthday mama, I love you!

Moving on to today…

I got 8.5 hours of sleep last night and practically sprung out of bed this morning.  It think a good nights sleep was exactly what I needed to not feel sickly and run down.  Since I am obviously feeling better and have loads of energy, back to the gym routine it was for me.   7.2 miles in 67 minutes.  Whoohoo!

For breakfast this morning, I dug into the freezer for inspiration last night.  Guys, I love the freezer, and the freezer loves me.

Whenever we have leftovers that I won’t eat before they go bad, bread products, fruit, meats, etc., they all go in the freezer for future eating.

Now I obviously didn’t find my Barney Butter in the freezer, but is the star of my breakfast.  How could Barney Butter not be the star of any meal that it is included in?

But what I did dig up out of the freezer is a pumpkin bagel!

I love buying ‘last nights bagels’ from the local bagel shops such as Brueggers and Panera. However, they don’t have the added preservatives, so they go bad much, much quicker than store-bought bagels. So into the freezer of love they head for purposes like today.

So yes, I am having a bagel + Barney Butter for breakfast. And a banana to have with breakfast or as a mid-morning snack.

Lunch today will be bought. 🙂 Reasoning? Because my company has today off, but I am working. So if I am working, you best bet I will be treating myself to something good! (No worries, I get an extra vacation day for working today).

While I am out for lunch, I will also be sending Petrie, as well as one of my favorite bloggers and best bloggie friend, packages today.

Does your work/school have today off? If so, what are you doing to enjoy your day off?

I’m still alive!

Hey bloggies.  Have no fear, I am still here :).

It has been quite the whirlwind weekend in my world.

Friday night we had a sleepover at Mike’s parents house with Petrie.  She was SO excited to see us (of course more excited to see me, haha).  She fell asleep first on my lap and then on Mike’s when we were watching a movie.  So. adorable.

Yesterday we took Petrie to the vet and I am happy to say the vet said she was in perfect health.  She did so well around all of the other animals and people.  We got a real winner.

The rest of the day included: playing Bingo with our friends at the Uptown VFW (we are really cool like that!). It was actually surprisingly quite fun. Mike won one of the games :). Then we met up with my good friend who now lives in Miami and her boyfriend.  This turned into drinks and dinner, which turned into having people over to play Rock Band and have drinks at our place.

Unfortunately, I have no photos of Friday night or yesterday because we were out and about and my camera died :(.

Luckily, I wasn’t in rough shape this morning and was able to head to the gym.  It had been a few days since I got a nice sweaty workout in, so I was geared up mentally to get in a good one.  I started on the treadmill thinking I’d go for maybe 6 or 7 miles, but ended up doing 10 in just under 95 minutes. Probably a good thing with all of the candy, pizza, beer and takeout I’ve had in the fast few days. Yikes!

Before the gym I needed fuel so I had half an Arnold’s Thin with PB and jelly and a banana.

I’m off to bake my mom’s famous banana bread then we are off to Mike’s parents house to see Petrie and watch the Viking’s game.  We will be eating a ‘brunch’ there.

See you later! What are you up to this Sunday?

It’s been a long one.

We made it, I can’t believe it.

At the beginning of this week I went through a traumatic event in my life. While I still am technically going through it, things are looking so much better. And it is only because I have the best mom EVER! :mrgeen:

Long story short. This week seemed like it went on and on and on. This weekend’s plans include…

  • Friday night: Sleepover at Mike’s parents with Petrie.
  • Saturday: Take Petrie to the vet, take her to PetsMart, play with Petrie and then maybe see some friends.
  • Sunday: Hang out with Petrie (yes, again!) and apple orchard maybe.

Why am I hanging out with Petrie so much? Well, of course because she in my puppy, but also because my mom did yet another amazing thing. She is taking Petrie back to Texas with her next week when she comes here on business and saving Mike and I about $700. This woman is incredible, it brings tears to my eyes thinking how lucky I am.

Anyyyyway. I did a session this morning: Yoga for Runners. And you know the whole time I was thinking about this…

Yep, I went for a cinnamon chip scone again last week. These are hands down my favorite that I have tried. I may just have to go for this flavor again today. I have been surprised that they haven’t had a pumpkin flavor! Maybe today, and then maybe I would change my mind about the flavor I wanted.

Lunch today is leftovers from last night.  Since we were over at Mike’s parents house for quite some time, they offered to bring us home dinner.  Of course we didn’t argue.  They were picking up take-out from Big Bowl, a Chinese/Thai restaurant here in Minnesota.

I hadn’t eaten there in ages.  Once I looked at the menu, I knew exactly what I wanted.

From the menu:

yellow curry vegetable with tofu
bok choy, green beans, seasonal vegetables, yellow coconut curry sauce

Yellow Curry Vegetable with Tofu- bok choy, green beans, seasonal vegetables, yellow coconut curry sauce.

It came with rice, however, I substituted rice for noodles.  I would choose noodles over rice any day, hands down.  Even better, Big Bowl has whole wheat noodles.  (Sorry, I got a little curry on the sticker, haha.)

This dish was excellent. The tofu on the other hand, not so great. It seemed barely cooked even. That was okay in my book, they filled my portion with plenty of veggies!

K, I’m off to work and to get my SCONE!

What are you up to this weekend? Do you have anything exciting to look forward to? I am going to LA to visit my brother next Wednesday night through Sunday!

She snores!

Happy Thursday!

I get to work, open up my email and see an email from Mike’s step mom saying that Petrie snored last night. My heart melted. Such a great way to start off the day :).

At the gym this morning I did 45 minutes of intervals on the elliptical. It is always nice to switch things up at the gym.

For breakfast this morning, I packed some waffles to toast up at work, along with some peanut butter and jelly.

Last week I was lucky enough to have Go Lean waffles on hand.  This week, not so much.  Instead, I have to settle for Eggo.

Note to self… I must go and get more Go Lean waffles.  Look at Go Lean’s nutrition facts:

Compared to Eggo’s:

The difference in fiber and protein is crazy.  Not to mention, Eggo’s waffles are smaller (boo) and will not have the staying power like Go Lean’s.  Oh well.

I also packed an apple to snack on this morning. However, I may save that for an afternoon snack. My boss brought in warm, fresh scones and muffin’s this morning… I of course picked one up to snack on.

I selected a raspberry muffin that is seriously out of this world. You can definitely tell it is packed with love, aka, tons of butta.

For lunch I decided to eat up a frozen dinner that I have had in my freezer for some time. I initially packed Sun Dried Tomato Pesto Chicken. Sounds pretty good huh?

Then this morning I found my all time favorite Lean Cuisine hiding in the freezer (see, I reallly need to eat up my freezer)- Chicken in Peanut Sauce.

Along with a banana that is unphotographed that I grabbed.

Do you have a favorite frozen dinner?

I’m off to work. Then tonight I’m going to see PETRIE!!!!

Road trip?

Happy humpday! We have made it to the mid-week marker. Thank goodness.

This morning I headed to the gym after my day off yesterday. Yesterday morning and after work I wasn’t feeling the gym. Sometimes when I am blue I just need to chill out in my sweatpants. However, I made up for it this morning by doing a extremly hard 7 miler. Isn’t it funny how some days your runs are a breeze and others you want to die after 10 minutes?

To ‘reward’ myself (well, mostly because I wasn’t feelin’ anything at home to bring for breakfast) I stopped at Caribou and got a Chia Tea Latte and a some bluberry coffee cake.

For lunch I made a good ole’ wrap. These guys hold me over so well. The base of my wrap is garlic hummus and refried beans.

Next layer is some green bell pepper.

And lastly a large carrot. This will most likely be eaten separately.

I also packed a banana and an apple to have with lunch. I’m proud of my extremly healthy mid-day meal.

Petrie update! So as you know, Petrie will be headed to Texas in the upcoming weeks. We aren’t sure if we want to fly her down, so we may be taking a ROAD TRIP. Are we crazy? Lol.

Ok, got to get outta here. So much work to be done and not enough time to do it.

Have you ever taken a road trip? Do you like road trips?

I love my mom

Hey guys.  All y’all are seriously the best.  Seeing your comments coming in throughout the day seriously got me through today.  A huge THANK YOU.  The blog community is the best.

I am happy to report that I am NOT losing Petrie. While I will not have her living with me for roughly 9 months, I WILL get to have her eventually.  I can see the light at the end of the tunnel.

People have asked if we will still think of Petrie as our dog in 9 months.  My answer?  YES. No question.  I adopted her, she is my baby.  Judge all you want.  Or don’t judge and understand.  That is preferable.

So where is Petrie headed?

Yep, the great state of Texas.  My mom has opened her heart and home to let Petrie come and stay with her. (I think she secretly wanted that to happen all along).  Even better, we will be hiring a dog walker to come and take her out during the day.  Petrie will get so much love with my mom.  And…. I will be home for four days over Thanksgiving and eight days over Christmas.

Texas is a cheap airline ticket, so Mike and I will be taking many random adventures to see our pup.  Yes, VERY crazy story of getting our animal and having my mom foster her.  However, things aren’t always easy.  And she will be staying put for awhile- no traumatizing the animal!  Needless to say, I feel so relieved and can’t wait to have Petrie in my life permanently.  Eek!

So I haven’t had the best appetite lately, I’m sure you can imagine.  But here are a few random eats from today.

Lunch was a Veggie Delight sammie from Subway.  Some cheddar, light mayo and mustard made an appearance on the sandwich as well.  I looove their honey wheat bread.

I had some snacks this afternoon, and obviously breakfast.

When I got home, I tried a (chip?) that Mike’s sister brought us back from Japan.

Ummm… not even sure how I could even start to describe these.  They were awful.  I am going to have Mike try them and have him tell me what he thought they tasted like.  Rotten meat maybe?  Lol.

Dinner was random since we still both were uninterested in food a bit (Petrie issue wasn’t resolved at this point).  We had baked potatoes with sour cream, cheese and a sprinkle of bacon bits.  I also had some steamed broccoli and a few spoonfuls of Kraft Spirals.

And dessert, which for what I have gone through the past few days, I more than deserve dammit!

Don’t worry.  I’ll only have one and a bite of Mikes.

Ok, I am off to relax.  These past few days have taken it out of me.  I am so sorry for being so negative the past few days.  I promise I will be my positive self from here on out.  Petrie is safe=Jenna being so relieved and happy.

I want to give my mom a huge shout out first though. She is seriously the most amazing mother in the world.  She would do anything in the world for my brother and I and has made many sacrifices to do so.  Would all mom’s do what she is doing?  Absolutely not.  Is she judging us on this really stupid yet now hilarious situation we got ourselves into?  Absolutely not.  She is willing to make sacrifices in her life for both Petrie, Mike and myself.  For that, I will never be able to repay her.  But I will love her more than anything, let her know how much she means to me and thanks her over and over and over again. She understands me and understands that this animal means the world to me.  She is willing to take on a PUPPY.  Mom, you are my favorite.  I LOVE YOU!

Feel free to give leave a comment about how wonderful your mom is!

May I present to you my little pup, Petrie.

Yes, Petrie like as in the Land Before Time. 🙂  We aren’t sure how we came to this name but Petrie is already understanding her name.  Potty training is going much better today, although we still have some work to do of course.  Errr… a lot of work.

She also is loving her kong with peanut butter.

In terms of food today, I didn’t photograph everything that I ate.  However, here is what I did photograph.

When I woke up I had a piece of toast that I would like to dedicate to my puppy.  This toast has two sides: pb and banana and butter and jelly.  Just like Petrie, she can be a snuggle buddy or a little devil!

This afternoon I made homemade granola.  I had some mixed with yogurt for a snack this afternoon.

This was my first time making granola myself.  I must say, it was a breeze.  I will definitely be doing this more often.  And it would be so easy to switch up the ingredients and get creative.

Dinner tonight was at our house.  Mike’s parents came over to meet the new puppy in the family.  Since my blog isn’t yet known to all, I didn’t take any photos.  Stand in photos cool?  They’ll have to be!

The star of the meal was Chipotle Sloppy Joes from Cooking Light.

On the side, Alexia Olive Oil and Parmesan fries.

Sorry about the tiny photo, lol.

Our plan was to go to the apple orchard today.  However, this was the plan before we got a dog yesterday.  So while our trip to the orchard may be delayed, eating apple pie won’t be.  The following is currently in the oven. Which we will be topping with pumpkin pie ice cream.

While I am excited to have a piece of this pie I would much rather have made my own.  Beggars can’t be choosers though, right?

What is your favorite type of pie? I would have to go with Key Lime!

Have a pleasant Sunday evening bloggies.  I will be back in full force tomorrow, I promise!
